The story
The constellation of Orion contains one of the most beautiful celestial bodies in the sky: the great Orion Nebula, whose stars shine with a special brilliance throughout the winter.
The commune of Saint-Sulpice-de-Faleyrens, which on the road to Castillon almost touches Saint-Émilion with the tip of its bell tower, is flanked by a small hill where the rows of vines are aligned as if on parade.
On the gentle slopes of this place called Mondou, thirteen hectares surround the winery of a castle which, since its birth in 2000, has borne the name of Mondorion.
The estate, rooted in a terroir with a harmonious character, is driven by a constant pursuit of authenticity. Every action, from the vineyard to the cellar, is carried out with respect for the soil, the fruit, and the vintage.
Guided by a passionate team, the estate perpetuates a demanding know-how, where tradition and oenological precision unite to reveal the most sincere expression of its terroir.

The vineyard
Château MONDORION has the particularity of being built on light sandy-gravelly soil.
In this naturally drained subsoil, the old vines (with an average age of 50 years) draw the essential elements to give a wine whose fruitiness and feminine velvety round out around a frame of rare elegance.
This unique terroir is ennobled by careful work in the vineyard, with the sole aim of bringing the grapes to an irreproachable stage of maturity.
The root system extends far into the depths of the earth in order to draw the best from it; the grassing practiced between the rows gives the earth a microbial life where the vine finds the essential elements for its development.
All the work carried out during the year, at each stage of the growing cycle (leaf stripping, disbudding, green harvest, etc.) is carefully designed to ultimately produce Merlots and Cabernet Francs capable of producing among the best Libourne wines. .
Once brought to their optimum quality, the grapes are harvested manually in crates to leave nothing to chance, sorted on arrival at the cellar.

Winemaking
If it remains completely classic, the vinification of Château MONDORION is nonetheless the result of know-how that has long proven its worth.
Taking advantage of equipment that is both completely new and revolutionary, Thibault Cruse imposes a particular style for wines with balanced, melted and concentrated material.
The very large vats optimize gentle extraction of color and aromas by promoting the relationship between the juice and the marc cap.
At the end of fermentation, the wines are then put into barrels and amphoras where they will remain between 12 and 15 months depending on the vintage.
From this slow maturation they will take on the substance and finesse that make all great wines special.
